Ingredients:

  • 4 eggs
  • 2 2/3 cups sugar
  • 2/3 cup vegetable oil
  • 3 2/3 cups flour
  • 3 ½ Tblsp. baking powder
  • a pinch of salt
  • grated lemon peel
  • 2/3 cup sparkling water (unflavoured)

Put the eggs, sugar and oil into a large mixing bowl, use a mixer to blend them together, until a little foam is showing. Add the flour and mix the dough with a wooden spoon. Add the remaining ingredients as you stir, the sparkling water coming last. Use a previously unopened bottle for best results.

Give the dough into a well-greased bread pan and bake at 350 degrees for about 60-65 minutes. Voila!
